A fascinating folk legend about cold-served rabbit we thought we’d share with you

During the Republic of China era, Cold-Served Rabbit was also known as Thick-Flavored Cold-Served Rabbit. Legend has it that it was created by a tavern owner named Liu at Dengganba in Ziliujing. It was an excellent bar snack used to attract customers. Boss Liu was a gentleman ranked fifth in his family from standard lineage. He was extremely particular about eating and drinking, highly skilled in culinary arts, and a famous figure in the catering industry of the Zigong salt fields.

He once wrote a recipe book called "Fuxi Culinary Records", which included the method for making cold-served rabbit. He never taught it to outsiders, personally cooking it strictly on a small stove in his private courtyard. After Boss Liu passed away, this recipe book went missing, and the method of making cold-served rabbit was temporarily lost.

Later, his younger brother Liu Junshi continuously researched and improved it until the 1980s, when he successfully recreated the long-lost "Thick-Flavored Cold-Served Rabbit." This dish requires the selection of premium rabbits about 5 months old, meticulous knife work, and seasoning with Sichuan peppercorns, star anise, broad bean paste, dried chilies, tangerine peel, and various other spices. Using unique heat control and stir-frying techniques, it ultimately presents a classic flavor with a bright red color, delicious aroma, crisp texture, and a mildly sweet spicy aftertaste.
